Why Blueberries are Good for Eye Health
Blueberries are a fantastic fruit and one that is full of essential nutrients for your eye health. An antioxidant, blueberries are packed with bioflavonoids and vitamin C, which may reduce the risk of macular degeneration and cataracts. The blue skin contains anthocyanin which is linked to better night vision and reduced eye strain. Blueberries also accelerate the production of retinal purple, necessary for healthy vision.
Blueberries can be enjoyed on their own, in smoothies, over your breakfast cereal, in salads, desserts and can be used as sweet or savoury.
This week we have a beautiful salad recipe for you to try. With blueberries in season in Australia from June to April, these coming months are a perfect time to take advantage of the fresh berries we have here on the Gold Coast.
Minted Watermelon, Cucumber and Blueberry Salad
Makes approximately 2 cups
- 1 cup diced watermelon
- 1/2 cup diced cucumber
- 1/2 cup fresh blueberries
- 5 fresh mint leaves, chopped
- Juice of 1 lime
How to Make in 2 Easy Steps
- Prepare all ingredients
- Place all ingredients in a small bowl and toss gently
Serving Suggestion: Add a spoon of coconut yoghurt on top for added flavour.
