It’s that time of the year again when you may have indulged a little too much over your holiday break and by now you are feeling a little worse for wear.

A great way to get things back on track is to start your day with a fresh juice. This simple green juice recipe from foodmatters is one of my favourites as it is full of ingredients that are great for the health of your eyes.

Apples are full of bioflavonoids. A diet rich in bioflavonoids appears to lower your risk of cardiovascular disease, certain cancers, cataracts and macular degeneration. While kale or spinach the all time eye health superfoods are full of Lutein and zeaxanthin. Lutein and zeaxanthin (LOO-teen and zee-ah-ZAN-thin) are important to your eyes because they help protect your retina from damage caused by the sun’s harmful ultraviolet (UV) rays and high-energy visible (HEV) light. Prolonged exposure to UV and HEV rays may damage the retina and increases your risk of cataracts later on in life.

Ingredients

  • 1 green apple
  • 1 cup of leafy greens (kale or spinach)
  • 1 small cucumber, halved
  • ½ Lemon
  • 1 handful of fresh mint
  • 1 inch of ginger

Method

Just throw all of the ingredients in a juicer and away you go.
